⦿ Wooden or silicone spoons only
⦿ Plastic sieve only ( they are like hens teeth, pep stores usually stock them )

⦿ 2L Full Cream jersey milk, if possible. If not then fresh full cream milk, just not long life milk.
1. Wash your glass jar and rinse with clean water.
2. Take your ready cultured grains with the content in it and empty it into your jar.
3. Add your milk of about 300 ml for now, you can increase this as your grains grow and you want to add on how many glass you want for yourself or family for the day. I like to have about 200 ml after a meal, lunch or dinner, or if you have breakfast, a great option for breakfast.
4. Let it ferment overnight and cover the top with a small cloth, not a lid. This live culture needs to breathe
5. 24 hrs later you can strain it
6. Take your plastic sieve and a clean plastic bowl and pour the ingredients through your sieve and stir the milk through , leaving the grains behind.
7. Take your grains and place it straight back into the jar and put your fresh milk in and follow the process again.
8. You can then enjoy your kefir milk, you can place it in the fridge to get cold or enjoy as is, or place it in a container and drink as you want it. You can add a little cinnamon but start enjoying the taste for what it is.
My grains are growing and my milk is tasting a little more sour.
⦿ You can remove some grains put it in a Tupperware with milk and freeze it for a friend, or if you want to increase your making for a later stage.
I am going away and wont use it.
⦿ No problem you then take your grains with milk to cover it , close the lid and put into your fridge ( 10 days or so they are happy) , the cold reduces fermentation.
⦿ When you back rinse the grains with filter water and start your process again.
My Milk splits , while fermenting is this normal ?
⦿ Yes that is when your fermentation happens and your milk cultures , the yellow is the whey protein , when you strain it , you strain everything and mix it together.

⦿ Yes , coconut milk but it needs to every 10th time be replaced by cows milk as that feeds the grains , you can add half a teaspoon of prebiotic fiber while it ferments as that also feeds the grains,
⦿ Water – no it is not a water Kefir.
